Downtown Everett’s New Speakeasy: The Colby Club
Wandering in for an inaugural visit one Winter night, I wasn’t even sure if they would be open.
Monday nights and all.
Turns out, Everett’s new Colby Club is open seven nights a week.
The former Downtown Everett Starbucks has gone from a corporate coffee house to small-batch cocktails with speakeasy vibes.
And we are not complaining.
Despite the stark contrast between the disheveled winter layers we were wearing and the black vests and ties of the staff that greeted us, we felt right at home. We slid into an empty seat at the bar with a carafe of water filling our glass just as quickly as we could sit down.
No joke, as we soaked in the small and comfortable environment, we instantly felt Daphne’s esque vibes of Edmonds fame, which was immediately followed by meeting the bartender, Kevin Taylor, who informed us that The Colby Club owned by Karen Taylor and her husband Robert Penrose shares ownership with Revival Cocktails in Mount Vernon and Kevin’s sibling, Brian Taylor, owns Daphne’s, amongst other quality cocktail establishments in Bellingham and New York.
This family seems to know their craft.
For those unfamiliar with Daphne’s in Edmonds, it is one of the most delightful bars we’ve patronized. Not much bigger than a shoe box, the bartender is a premier part of the intimate experience. And while Everett’s new Colby Club is approximately 2-3 times the size of Daphne’s, it still shares many of its great qualities-
A comfortable and classy environment. Delicious hand-crafted cocktails. And a delightful bartender. However, The Colby Club’s added size allows for extra space for those wanting a more private experience.
The cocktail menu is chock full of classic cocktails & libations and signature and seasonal drinks. The food menu offers about a dozen options split between the appetizers and entrées, which range from a Bavarian pretzel to baked brie, Beecher's mac & cheese, and cheese curd lasagna. As well as several flatbread options.
I opted for an Old Fashioned and Cheese Flatbread Pizza. I missed it on the menu that my cheese flatbread came with pepperoncini’s and fresh basil amongst the mozzarella and feta cheeses. The flatbread was good, but the old-fashioned hit the spot.
Good cocktail bars are made for good cocktails. And mine did not disappoint.
The Colby Club has plenty of non-alcoholic cocktail, beer, and wine options to choose from as well.
I asked Kevin why they chose Everett to open The Colby Club, “because it was underserved,” he shared promptly. He mentioned how when they started the project, there was nothing like it. “Now the Muse and some other nice places have opened.”
Low lighting.
Classy music.
Small place.
They’ve already had to start turning people away on the weekends.
But don’t worry, The Colby Club is open seven days a week.
“We’ll be getting signage on the windows and a green light outside,” Kevin shared.
